Sencha

This high-grade tea unites classic Sencha notes with the refinement of a mountain terroir. Thanks to the humid environment where this tea plant grows, the leaves are richer in amino acids and develop deep umami notes, making them sweeter than a typical Sencha. Grown in the famous village of Hoshino, they were given a medium chumushi steaming for a balanced and mildly sweet brew, with more mild alfalfa and raw sugarcane than mown grass in the cup, and a bit of apple peel astringency.

Too high water temperature would burn the leaves, and the tea will taste bitter and sour.
