aged green tea

While cold storage is rigorously applied to all our green teas, for which their freshness is of paramount importance, we have aged this Yunsi for three years at room temperature in our warehouse.
The result is surprising: the original intensely vegetal flavour, which put one in mind of walking through jungle undergrowth, has been replaced by intensely fruity notes, as if from the trees above. And what had started as a pleasant pineapple flavour accompanied by green vegetables has bloomed into a bouquet of tropical fruits: now mango, passionfruit, and peach join the pineapple astringency for a veritable fruit salad, while the leafiness of steamed bok choy keeps it savoury.
Balancing its intense, fruity acidity with a brothy umami and gentle sweetness over several infusions, it remains an excellent tea for spring and summer, and could equally accompany fruity deserts or salty dishes.
Our tip: don’t miss the large-volume packages (100g, 200g) for better value and further ageing at home.

For best results brew in a tall glass and fill with water before adding the leaves. Too high water temperature would burn the leaves, and the tea will taste bitter and sour.
