Oolong Black Pearls

 

Is it a black or an Oolong tea? These rolled pearls are so dark that could be considered a full-fledged black tea. However the flowery notes, deep honey taste and lack of bitterness remind us of a classic Taiwanese Oolong, like Dong Ding; and so we prefer to keep it in the Oolong's realm. We won't object though if, to your palate, it recalls rather the notes of aromatic black teas.

The Oolong black pearls are cultivated and processed at a family farm in the north of Thailand with Jin Xuan tea bushes, a traditional Taiwanese cultivar.

Preparation
IN THE TEAPOT
  • Quantity: 6g / 500ml
  • Water temperature: 100°C
  • Infusion time: 4 min
GONGFU CHA METHOD
  • Quantity: 3g / 100ml
  • Water temperature: 100°C
  • 4 infusions: 45, 30, 60, 90 sec

For best results in gongfu cha, brew in the traditional gaiwan or in a Yixing teapot.
