Yunsi is a green tea from Lincang, Yunnan, made from the same cultivar (Da Ye Zhong or Big Leaf Variety) used for Pu'er but processed as a springtime green tea.

This immensely refreshing tea captivates from the first sniff of the leaves, bringing notes of water chestnut, savory greens, and a distant sweet peony finish.

Every steep of this tea is smooth and crisp, with strong notes of grilled eggplant and zucchini, sesame seeds, bok choy, and fresh peas. If you prefer your green teas savory over sweet, you really cannot go wrong with Yunsi!

Preparation
IN THE TEAPOT
  • Quantity: 6g / 500ml
  • Water temperature: 80°C
  • Infusion time: 3-4 min
GONGFU CHA METHOD
  • Quantity: 3g / 150ml
  • Water temperature: 80°C
  • 3 infusions: 60, 60, 90 sec

For best results brew in a tall glass and fill with water before adding the leaves. Too high water temperature would burn the leaves, and the tea will taste bitter and sour.
